
Grainne’s Easy Peasy Fish Pie
Easy peasy fish pie.
Ingredients
About 400g Mixed fish pieces (cod, salmon, smoked haddock)
1 kg Rooster or similar potatoes
Butter and milk to mash with potatoes
25g butter
25g flour
400 ml milk
2 bay leaves
A couple of leeks
Handful of parsley
Method
Preheat oven to 200C /180C fan. Bring potatoes to the boil then simmer until cooked. Drain potatoes. Heat milk and butter for mash add to potatoes, season with salt and pepper and mash until smooth.
Now get your sauce going…
Add sliced leeks, fish and bay leaves to milk. Heat gently. Do not boil as milk could split. If you want to add a little extra flavour add a half glass of white wine to the mix…season with salt and pepper.
Cook gently for about 10 mins or until fish is just cooked. Use a slotted spoon to remove fish and leeks to an oven proof dish. Discard bay leaves. Reserve the flavoured milk as the base for your sauce.
Melt butter, add flour and cook gently for 1 minute. Use a balloon whisk and whisk in reserved milk bring to the boil while whisking.
Once thickened add chopped parsley and pour over fish.
Spoon on mash and brush with beaten egg.
Pop into the oven for 20 to 25 mins.
