My favourite season of the year has finally arrived! It’s nice to take a stroll and see how the leaves change from green to red, orange, yellow or brown before falling and the countryside looks amazing. One autumnal fact is that sometimes you want to go out but the weather is awful. I think one of the best ways to change a rainny day to a cosy and funny one at home with family and friends is baking! I used tobake buttery cookies with my grandmother and my mum years ago and, the last weekend, I went from Madrid (where I am living now) to Segovia (my hometown) to spend the day with my family and to bakesome buttery cookies, spending a rainy but lovely evening with my mum…as we used to do.
Buttery cookies recipe:
– Butter (2 cups)
– 1 egg
– Sugar (1/2 cup)
– Flour (5 cups)
– Baking Powder (1 spoon)
Separate the yolk of the egg from the egg white and put the egg white in a bowl (you will use it later).
Beat the butter, the egg white and the sugar. Add the flour and the baking powder little by little. Beat all the ingredients and the dough will become dense. Once you can’t beat it properly, knead the doughuntil the ingredientes are well combined and finish adding the rest of the flour. When the dough is well kneaded then use a rolling pin.
You can use different moulds to create different shaped cookies. Now its time to use the egg white we put in a bowl at the beginning. As you can see in the picture below, put a lick of egg white on each cookie (this is important because they will look yummier at the end)
Preheat the oven to 250c and put all the cookies in.
A few minutes later you will have these yummy buttery cookies.
