Lemon Basil Lemonade
Grown-up lemonade with a hint of basil, this might just be your new favourite cocktail. It makes wonderful sorbet too.
1 ½ cups vodka
1 ½ cup fresh lemon juice
1 ¼ cups basil sugar syrup
2 cups sparkling water
for the basil sugar syrup:
1 cup sugar
½ cup caster sugar
½ cup packed basil leaves
- To make the cocktail, combine all ingredients in a pitcher, stir well, and place in the fridge to chill.
- To serve, pour over ice-filled glasses and garnish each with a small sprig of basil.
To make the basil sugar syrup:
Combine all ingredients in a small saucepan over medium heat. When the sugar is dissolved, turn off heat, cover and let infuse for at least 1 hour. Once cooled to room temperature, store in the fridge until ready to use.

MAKES 8 COCKTAILS
1 ½ cups tequila
4 ½ cups pink grapefruit soda
juice of 6 limes + lime wedges to garnish
Note: If you can’t find pink grapefruit soda, Tesco sell a lovely Tesco Pink Grapefruit squash. Dilute this with sparkling water to make your own pink grapefruit soda.
